Aioli

A good aioli relies on a good mayonnaise base, combined with a big punch of garlic.

Method

  1. Make the mayonnaise recipe
  2. Finely mince the garlic in a pestle and mortar
  3. Lightly chop the parsley
  4. Blend it all together in a food processor until smooth

Notes

Be careful not to over-blend the mayonnaise otherwise it will become too thick.
