Aioli
A good aioli relies on a good mayonnaise base, combined with a big punch of garlic.
Ingredients
- 2 large egg yolks
- 250ml sunflower oil
- 2 tbsp Dijon mustard
- 2 tbsp white wine vinegar
- 2 garlic cloves
- 1 large bunch of flat leafed parsley
- Salt and pepper to taste
Method
- Make the mayonnaise recipe
- Finely mince the garlic in a pestle and mortar
- Lightly chop the parsley
- Blend it all together in a food processor until smooth
Notes
Be careful not to over-blend the mayonnaise otherwise it will become too thick.
